I have a 1968 Lemans I am putting together and I am looking to a good Rear end Gear I am looking for something in between a freeway/ street performer it’s a 350 with a stroker kit from Butler Performance that takes the 350 to 383-413 CID With .30 over pistons I am using #16 heads HP and a Ram Air Aluminum intake I want to go with a roller cam set up it has a auto transmission I have a his/her shifter and plan on using a Torque converter with a stall of 2400 - 2600 

A solid rear end ratio around 3.55 is respectable (which is what I run). Remember that a "low gear" is numerically high. So a 4.10 gear is low. It will be great for burn outs and getting out of the hole but it will hurt your freeway mileage. A "high" gear is numerically low, so a 2.89 is great for highway mileage but terrible off the line. So somewhere between 3.40-3.80 is probably best, especially if you decide to couple it up to a 200-4R overdrive transmission (which directly bolts up to the Pontiac engine with no adaptor kit).
